The Sapphire Coast Oyster Trail is the first of its kind in Australia and promotes the region's oyster experiences to the visitors under the Oyster Trail brand. The trail was officially launched in June 2022, placing oysters front and centre as a major drawcard for visitors to the region.

The Trail is a collection of amazing oyster experiences on offer in the region, including farm gates, tours, tasting experiences and restaurants. It celebrates the quality of the region's world-renowned oysters from some of the cleanest waters in Australia. Visitors to the Sapphire Coast can also create their own bespoke Oyster Trail itinerary from the recently designed Sapphire Coast website which showcases tourism-ready oyster experiences on offer in the Bega Valley Shire.

Uniquely placed with five key oyster-producing estuaries, all of which imbue a special flavour upon the oyster known as 'merroir', this unique taste is a drawcard for visitors and will continue to be a focus of marketing the Oyster Trail in the future. Not everyone is a fan of oysters, however, they are evidence of our untouched pristine coastal landscape, and that, you can enjoy in spades.

Sydney rock oysters are fed by the cleanest environment in New South Wales, and they have an exceptional reputation in the culinary world, showing up at the best restaurants in the nation's capital cities. At the North of Eden gin distillery, their new Oyster shell Gin is distilled with local oyster shells from Sapphire Coast estuaries, blended with local saltbush, hawthorn leaf, rose, lemon myrtle and ginger. It received a Bronze medal in the 2021 International Wine and Spirits Competition and was named the Best Australian Gin of 2021. Discover more on the website and try to experience this Australian first which includes meeting the oyster farmer, oyster merroir tasting trail, oyster farm gates and more. Seek it out!
