Brisbane's best craft beer bar?
Okay, let's get the yeasty elephant in the room out of the way first. What does Saccharomyces mean anyway? Beer biologists versed in the miracle of fermentation will give a knowing nod to the question - the rest of us are likely more focussed on beer consumption than creation. Google knows all though - including a disturbing amount about our personal data - and the answers to life's big questions remain no more than a few clicks away.

Turns out Saccharomyces (pronounced sa-kuh-row-mai-seez apparently) is a genus of fungus that includes many species of yeast. For the uninitiated, beer contains four key ingredients: water, hops, grain (usually malted barley) and most importantly, yeast. During the fermentation process, yeast feeds on and converts the sugars of the grain and hops into alcohol and carbon dioxide. Each specific type of yeast produces specific by-products and this influences both the flavour and aroma of the finished beer.

Enough high school science though. In short, beer needs yeast to be beer meaning Saccharomyces is a pretty cool name for a pretty cool craft bar.

When first strolling through the entrance off Fish Lane, Saccharomyces Beer Cafe appeals as the sort of establishment craft barflies dream of setting up. The timeless red brick exterior is warm and welcoming and the kegs-as-pots standing sentry at the door confirms the venue's craft beer credentials.

Inside, the polished concrete floors complement the simple black-framed, brown leather (faux-leather?) seating and timber or marble-look table tops. Instead of the festooned strings of lighting common to many bars and breweries, the exposed rafters are lined with an eye-catching array of coasters and branded paraphernalia. Adding both colour and vibrancy, the gallery of coasters leads you to the small but perfectly-arranged bar.

This is where things can become a little overstimulating. With over a dozen rotating taps, even the most dedicated sampler of craft drops will very likely find something new here. Selecting from the options scrawled in chalk is no easy task but the bar staff are knowledgable, friendly and happy to help.

As far as food goes, platters and snacks inhabit the menu but it's really all about the Belgian-inspired boulets. Essentially giant meatballs floating in an exorbitant amount of gravy, boulets are the perfect filler and beer accompaniment and provide a novel alternative to the standard chicken wing offerings elsewhere. A schooner at pot price adds a bit of value to your boulet banquet too.

Price-wise, you can get a cheaper mass-produced pint at your local, likely Woolworths-owned pub but that's obviously not what Saccharomyces is about. A couple of dollars more gives you the chance to indulge in something new, fresh and targeted directly at craft beer lovers' palates.

Opening hours start at noon each day and end at nine at the latest, depending on the day of the week. With this in mind, Saccharomyces is a great launching pad for a feed and quality brew before moving on. Alternatively, grab some takeaway beers from the extensive offerings available and continue the quality at home.
