Never before have chefs from all four of the Rockpool Dining Group's top restaurants come together to collaborate on a dinner.



But now the chefs from Perth, Melbourne and Sydney will get together in the kitchen at Rockpool Bar & Grill at Crown in Perth to present some of their best dishes to Perth diners at a one-night-only experience on Thursday, April 29.

Rockpool Bar & Grill and Sydney and Melbourne sister restaurants Rosetta Ristorante, Spice Temple and Sake Restaurant & Bar will each contribute to a four-course menu, plus snacks and dessert.



Rockpool Bar & Grill executive chef Corey Costelloe, oversees the three restaurants in Perth, Sydney and Melbourne, and will be joined in the kitchen by Perth's head chef Ludovic Mulot and chefs from the visiting restaurants. Dishes on the night will include Spice Temple's barbeque pork buns, Rosetta's gnocco fritto with mortadella, and a selection of Sake's spicy tuna roll, tuna tataki and tuna nori crisp.

There will also be agnolotti from Rosetta, Sichuan coral trout from Spice Temple and Cape Grim beef fillet with café de Paris butter from Rockpool. The menu will showcase local West Australian produce and be paired with quality WA wines for the first dinner of its kind.



The meal will combine the regional Chinese flavours of Spice Temple, the fusion flavours of Saké, the traditional hand-made pasta of Rosetta, and classic dishes from Rockpool. Chef Costelloe said it was the first time chefs from all four Rockpool Dining Group premium brands had collaborated together anywhere.

He said it holding the dinner in Perth, where so much quality produce was available was a privilege and all the chefs were excited to be working together.



The event is being held as one of 20 Friends of Good Food Month dining experiences in Perth to celebrate Perth Good Food Month presented by Citi in association with Visit Perth.

Each of the restaurants represented has very different styles. There's modern fine dining from Spice Temple in Sydney and Melbourne with a menu inspired by visits to Sichuan, Yunnan, Hunan, Jiangxi, Guangxi and Xingjiang.

Classic and modern Italian dishes are the province of Rosetta in Melbourne and Saké Restaurant & Bar features a fusion of Japanese cuisine with a modern twist.

Perth Good Food Month is running in Perth for its eighth year and features four feature events Young Chefs Lunch presented by Citi, Esmay Pop-up with Hearth Restaurant, From Noma to Nashville: Belles and Drasko's make Hot Chicken and Mitch Orr's Festa de Famiglia.

The Perth Night Noodle Markets, usually held as part of Good Food Month. have been cancelled this year because of the uncertainty around COVID-19.
