Rockmelon Sorbet Recipe

Like many parents, I like to offer healthy treats to my children that they can enjoy during the summer holidays. I had rock melon in my fridge that needed to use, so I started Googling 'sorbet'. Many websites and several cups of coffee later I found a great recipe from the
Women's Weekly that's easy to make and requires no " out of the ordinary" ingredients.
All you need is :
1.2 kg rockmelon
1 cup of sugar
1 cup of water
Cut up rockmelon into medium pieces wrap in cling wrap and place in the freezer. While they are freezing mix the sugar and the water together in a saucepan and bring to the boil. Simmer for approx 5 minutes until thickened. Place this in a container in the fridge to cool.
Take the rockmelon out 15 minutes before starting next step.
Place rockmelon and sugar water in a goblet blender and purée until all lumps are removed.
Place in a container and freeze; I chose to freeze mine in little containers, you could do it in a large one, but it will take longer to freeze.
By doing mine in small containers I was able to serve mine on a plate very stylishly. Simply run a quick spurt of hot water on the container sides and the sorbet will slide out.
Serve with ice cream, flakes of chocolate, almond flakes, or give it to the children still in the containers with a spoon; the variations are endless, well, almost.
Enjoy your (almost) guilt free summer treat, that (when served on its own) is preservative and gluten and dairy free.
