Sinfully Sweet Red Velvet Brownies with White Chocolate Buttercream Frosting Recipe

Today I thought we would try something new; baking. It's not going to be a weekly thing (because I live in a house with a very small, non-finished kitchen, and I also have a busy schedule outside of it). Furthermore, I'm not terribly domestic, I can cook, I cook very well, but whether or not I enjoy it can only be measured by how good the mixing bowl tastes when I am done.

Baking is also something I traditionally did with my mother as a child, so, it can be quite a sentimental thing that I like to do without interruption; difficult when you live in a house with four other people, a dog and three demanding goldfish.

I'm hoping that when I do really get into baking I will eventually get nerdy—I'm imagining Enterprise-shaped cakes and pastry with Captain American and Iron Man marriage jokes in their name. I'm also going to try and cover decidedly different cooking experiments; ones that aren't usually found in your average cookbook; such as the one I found and added to below.

Sinfully Sweet Red Velvet Brownies with White Chocolate Buttercream Frosting

For the Brownies:

20g unsweetened cocoa powder
2 tbsp red food colouring
2 tsp pure vanilla extract, divided
120g unsalted butter (room temperature)
275g granulated sugar
2 eggs (room temperature)
130g all-purpose flour
1 pinch of salt

For the White Chocolate Buttercream Frosting:

120g unsalted butter (room temperature)
200g icing sugar
1 tsp pure vanilla extract
100g white chocolate, melted
1 – 2 tbsp heavy cream

To make the Brownies:

1. Preheat the oven to 180 degrees. Butter and flour an 8& #8243 ;x10& #8243 ; baking pan.

2. Beat together (by hand or mixer, personal preference and what you have available), the butter and sugar until fluffy and light in colour. Add the eggs one at a time then stir in the remaining 1 tsp of vanilla. Set aside.

3. Mix together coco powder, red food colouring and 1 tsp of vanilla until a smooth, thick paste.

4. Add both butter mixture and coco mixture together until they are one uniform colour.

5. Add flour and salt to the mixture a handful a time. Mix until consistent in both texture and colour.

6. Pour batter into the prepared pan and bake for 20-30 minutes, or until a knife tip comes out clean when inserted into the centre of the brownies.

7. All brownies to cool in the pan. Once cooled (around 30-60 minutes) take them out of the pan and cut into around 12 brownies.

8. Prepare and/or apply frosting.

To make the Buttercream Frosting:

1. Mix (by hand or mixer, preference and what you have available), the butter and vanilla until fluffy, if there is a little excess vanilla which won't "take" to the butter, don't worry.

2. Add in the icing sugar 1/2 cup at a time; make sure the mixture has become consistent and completely mixed before adding each 1/2 cup.

3. Microwave/stove melt the white chocolate and add to the icing sugar mixture in small amounts. Once smooth add the heavy cream 1 tbsp at a time until the frosting mixture is thick and fluffy.

4. Apply a level covering of frosting to the cooled (and sinfully sweet) brownies.

5. Serve and enjoy!
