Rech by Alain Ducasse Hong Kong offers top quality seafood from France cooked with precision and a modern twist. Chef Stéphane Gortina and his kitchen presented a bowl of wild cod with garlic and watercress. This deceiving bowl of thick green soup was a lightly bitter and salty garlic and watercress mousse concealing tender, sweet and lightly oil morsels of hand-chopped wild cod.
