Rech by Alain Ducasse Hong Kong offers top quality seafood from France cooked with precision and a modern twist. Chef Stéphane Gortina and his kitchen presented a delightful bowl of hand-dived sea scallops with citron and gold caviar.
The slices of raw scallop were lightly grilled, folded through with a cedrat lemon condiment and topped with gold caviar. Each mouthful delivered the flavour of sweet and tender scallop with a light salty burst of fish roe.
