Diners of Alain Ducasse au Plaza Athénée in Paris will recall this classic dessert. The dish reflects nuances of Shojin cuisine. The three Michelin starred restaurant known for its orientation around fish, vegetables and cereals is one of the bastions of French cuisine.
Rech by Alain Ducasse Hong Kong delivered a similarly tasty dessert with lemon and kombu seaweed from Japan. Each mouthful delivers the citrus tang of confit lemon and kalamansi sorbet balanced with a pesto of kombu seaweed and tarragon.
