Rech in Paris was originally opened as an oyster restaurant and has continued to serve oysters since 1925. Therefore you would expect oysters at Rech by Alain Ducasse Hong Kong but perhaps not in the way most diners would expect.
We slurped on the full-bodied Princesse de Kermancy Creuses spéciales n°2 oysters. These oysters are all the rage at Rech by Alain Ducasse Hong Kong for one simple reason. Diners can't get them at any other restaurant in Hong Kong. They come directly from Brittany, located in the northwest corner of France.
