This grande eclair was just the dessert to wow the table. A signature dessert from Rech in Paris, the version served at Rech by Alain Ducasse Hong Kong did not disappoint. It uses chocolate from the Alain Ducasse Manufacture in Paris.
The eclair arrived in a long form with a dark and shiny coating of chocolate fondant over golden choux pastry and portioned at the table. Each mouthful delivered the right proportion of light and puffed pastry to the rich and sweet chocolate pastry cream.
