Diners of Rech in Paris will recall this signature dessert. An institution dating back to the 1925, Rech was taken over by Alain Ducasse in 2007. "Mr. Rech" was created as homage to the founder, Mr. Adrien Rech. Rech by Alain Ducasse Hong Kong delivered a similar venerated dessert with succès, hazelnut meringue, hazelnut ice cream and hot chocolate.
A circular base of thin hazelnut meringue supported a layer of French-style no-bake cookie topped with a disc of hazelnut ice cream. Warm chocolate sauce was then poured over to finish the dish. The chocolate used in this dish was from the Alain Ducasse chocolate manufacturer in Paris.
The result was a complex flavour profile on the palate. Each mouthful delivered the fragrance of hazelnut and sweet and chewy crunch of meringue, enriched by the interaction of chocolate, ice cream and praline butter cream.
