Diners at Le Louis XV by Alain Ducasse à l'Hôtel de Paris in Monaco will recognise this classic dish which has contributed to the renown of the restaurant. It has also set the standard by which all other babas are judged.
Rech by Alain Ducasse Hong Kong delivered a similar venerated dessert of sponge, rum and cream. The Rum baba arrived in a shiny silver bowl with the dome lid slid back to reveal the golden sponge. A generous pour of our choice of premium rum bathed the sponge, which soaked up the aged liquid. Finally a large dollop of lightly whipped vanilla cream was added on top.
The result is mouthfuls of sponge cake that was both light with citrus notes and yet heavy with sweet rum and rich with cream.
