A fairer twin to the XL Chocolate Éclair, this grande pastry had an equal wow factor at the table. A signature dessert from Rech in Paris, the version served at Rech by Alain Ducasse Hong Kong was as delicious as the darker sibling. It also uses chocolate from the Alain Ducasse Manufacture in Paris.
The eclair arrived in a long form with a white and shiny coating of chocolate fondant and grated tonka bean over golden choux pastry and portioned at the table. Each mouthful delivered the right proportion of light and puffed pastry to the rich and sweet vanilla pastry cream.
