A frozen sweet summer treat
Do you love raw slice recipes? I do. I love the fact that they are healthier than cakes and you don't have to turn on the oven to make them - which is perfect for summer!
I have previously written about delicious chocolate raw slice recipes and also ones that you keep in the freezer, for a cold summer snack. For this recipe, I wanted to make a bite-size treat for a friend who loves the sweetness of caramel slices, but she doesn't want the calories. Although this recipe may not be completely healthy (or taste like a caramel slice!), it has natural ingredients which are healthier than store-bought slices and hits the spot for sweetness. Why don't you make it for a sweet-tooth that you know, this weekend?
Step 1: Make the Base - Add the dates, unsalted cashews, olive oil and coconut to the food processor and blitz for at least 1 minute, until the mixture sticks together. Pour the mixture into a lined loaf tin, press down firmly and freeze for at least 1 hour.
Step 2: Maple Syrup Layer - Add the dates and unsalted cashews to a heat-proof bowl and cover with boiling hot water. Stand for 1 hour to soften.
Step 3: Drain the dates and cashews and add to the food processor with the olive oil, maple syrup, water, tahini and coconut. Blitz for at least 1 minute.
Step 4: Pour the mixture over the base and sprinkle with desiccated coconut for decoration. Return to the freezer and leave overnight to completely harden (it will take all night to harden, so ensure you leave it that long). Slice up into cubes when frozen and store in an airtight container back in the freezer. When you are ready to serve some, take them out 5 minutes prior to serving to soften.
I gave a box of these to my friend and she loved them! She also chooses not to "defrost" them prior to eating, and thinks they make a delicious frozen, summer treat. Enjoy!
