Sometimes when you have people coming for morning tea, you just need to whip something up quick - darn quick. So to that end, I have made it my mission to find the easiest, quickest cookie recipes. Enjoy.
Super Fast Butter Biscuits.
Preheat oven to 220deg (200deg fan forced).
Grease or line a baking tray with baking paper.

The dough is quite moist
1 1/4 cup Self Raising Flour
1/2 to 3/4 cup Caster Sugar (depending on how sweet you like it)
125g Butter (melted)
1 egg (beaten with fork)
Sift flour into a large bowl, add caster sugar.
Combine butter and egg then add to the flour mix.
Roll into balls and cook for 10 minutes or until golden (cook for less time if you want a softer biscuit). Let cool for a few minutes on the tray and then cool on a wire rack.

Super Fast Butter Biscuits
Coconut Macaroons (from Donna Hay)
These are old fashioned but yummy, especially if you love coconut like I do.
Pre heat oven to 180deg (160 fan forced)
Mix: 2 cups of dessicated or shredded coconut
1/2 cup caster sugar
2 egg whites
Roll into about teaspoonful balls. You need to squeeze them a bit so they hold together. Place on a tray lined with baking paper. Cook for 10 minutes or until golden.

Coconut Macaroons
Healthy Banana and Oatmeal cookies
Well, the title says it all here, plus they only take about 3 minutes to whip up and the ingredients are all natural.
Preheat oven to 180 deg.
Mash 2 bananas.
Add 1 cup of Rolled Oats
Mix together.
Now the rest is up to you - you can leave it at that or add other ingredient(s) if you desire. Extra ingredient ideas include chocolate chips, some nuts, dried apricots or coconut flakes.
Roll into balls and cook for around 10-15 minutes depending on the size. They are ready when golden around the edges.
Impossible Peanut Butter Cookies
Mix 1 cup of peanut butter
1 cup of caster sugar
1 large egg
Roll into balls and cook for 10-12 minutes in a 180 deg oven. Don't brown, they are ready when lightly golden.
Quick Mix Chocolate Cookies
1 box Betty Crocker Devil's Food Cake Mix
1/3 cup coconut oil
1 teaspoon vanilla
2 eggs
1/4 icing sugar (for dusting - optional)
Heat oven to 180deg.
Mix cake mix, oil, vanilla and eggs in a bowl. If needed, refrigerate mixture for 15-30 minutes so it's easier to form balls.
Roll into balls and roll in icing sugar. Place on baking tray lined with baking paper.
Cook for 9-11 minutes or until set. Cool on rack for a minute then cool on wire rack.
