Five Quick Work Lunches

The best part of the 9-5 daily grind (other than going home), is your lunch hour. To make the most of it, why waste time waiting in long lines at your local Thai takeaway, when you can whip up these quick lunches in minutes? Here's my personal selection for work-made fast food. Extra points go to the ones that require no cooking.

1. Tomato and avocado sandwich
Not only is this one super easy, but it's super healthy as well. Simply grab some bread, spread it with avocado and add some tomato slices. A quick and easy lunch, ready in seconds! Don't be fooled by its simplicity its delicious!

2. Pesto pasta
Ok, I admit I cheat a bit with this one. The easiest way is simply to cook some pasta the night before, re-heat at work, and stir-through some ready-made pesto sauce. One of my favourite meals, ready in minutes!

3. Vegemite sandwich
Another really easy one. Simply spread Vegemite sparingly across your bread and add any other ingredients of your choice. I personally love Vegemite and avocado, but I've been told by some that it tastes great with peanut butter. To each their own!

4. Bean salad
Another really healthy and really easy one. Simply buy a tin of mixed beans (around $1 at Woolworths), pour into a bowl, and add your favourite salad ingredients. I usually use rocket and spinach leaves, avocado and tomato.

5. Hummus pita roll
If you have some ready-made hummus, simply spread it on a pita roll, and added some sliced capsicum, cucumbers, and red onions. Another quick and easy lunch, that is ready almost instantly!

The best thing about these meals: they are so quick to make, that you'll be able to spend your lunch hour doing something much more important shopping! Enjoy your new spare time!

Peanut butter with Green Capsicum is great for busy mums on the run. Healthy and peanut butter is a natural antidepressant, too.
