My Grandma made the best pumpkin scones. They were moist and tasty and very rustic looking. They were extra special because she baked them in a wood-fire oven.
The recipe was then handed on to my mum and aunty. Sure, they used gas ovens, but the scones were still yummy.
Now it has been passed onto me. Whenever I make them, people ask for the recipe because unlike normal scones, these are moist and sweet, needing little more than a smear of butter to enjoy.
They are best enjoyed warm from the oven, or on the day they are made. They're probably great the next day, but I wouldn't know (they never last that long). Make a double batch and freeze them.
Marj's Pumpkin Scones
60g margarine or soft unsalted butter
1/2 cup sugar
1 egg
1 cup cold mashed pumpkin
2 cups self raising flour
Heat the oven to hot (240C) and prepare two trays with baking paper or foil.
Cream the butter and sugar. Add egg and beat until combined.
Stir in pumpkin, then add sifted flour. Mix well.
Place tablespoons of the mixture on the trays, allowing room for spreading.
Bake for 8-10 minutes or until golden.
