Pumpkin Lasagne - delicious, healthy, vegetarian and family friendly. The kids will love this recipe while gobbling up all of those vegies.
Preparation time 15 minutes (serves 4)
Delicious Pumpkin Lasagane packed with vegies.
Ingredients
150 gram of Kent/Jap Pumpkin – thinly sliced
1 x onion - thinly sliced
2 x potatoes – peeled and thinly sliced
6 x San Remo lasagne sheets (100% durum wheat semolina)
1 ½ x tablespoons of butter
2 x tablespoon of plain flour
1 ¼ cup of milk
cup of grated tasty cheese
2 x tablespoons of fresh flat leaf continental parsley
Pinch of vegetable salt
Eat hot straight from the oven as a light meal or main meal with a side salad.
Method
1. Preheat oven to 180c degrees.
2. Grease square lasagne dish.
3. Prepare vegetables by peeling and thinly slicing.
4. Melt butter over a low heat and add flour to thicken.
5. Cook until a little brown and just bubbling.
6. Gradually add milk, a little at a time, stirring constantly until consistency is smooth.
7. Take off heat and add a pinch of vegetable salt and grated cheese. Stir until smooth.
8. Layer pasta sheets, cheese sauce and vegetables alternatively until all ingredients are finished, leaving enough cheese sauce to cover the top of the dish, making the cheese sauce the top layer.
9. Sprinkle parsley over the top and cook for 25 -30 minutes or until brown on the top.
