Next time you're after a tasty pizza, skip the take-away menu, and instead make one at home. This pumpkin and goats cheese pizza is not only delicious, but it has got to be better for you than what most pizza places will deliver to your door. The gourmet pizza is sure to impress your guests, and don't be surprised if there are fights for the last piece on the plate.
1 tbsp balsamic vinegar 1 tbsp brown sugar sea salt 1kg butternut pumpkin, peeled and diced 100g goats cheese 4 slices of pancetta
1. In a small saucepan heat olive oil, then add spanish onions. 2. Cook onions for 10 minutes, or until soft. 3. When onions are ready, add balsamic, sugar, and a pinch of salt. Reduce the heat and then cook for a further 10 minutes, or until the onions have darkened and are completely cooled.
4. Preheat the oven to 230º. Place diced pumpkin on a baking tray, drizzle with olive oil, and when oven in preheated place in oven for 15 minutes until soft and tender. 5. Cover a baking tray with non-stick baking paper, and then place pizza base on tray. This recipe will work best with a thin pizza base. 6. Spread pumpkin evenly over pizza base, and then top with torn slices of pancetta and crumbled goats cheese. 7. Top with onion relish, and then place in the oven for 15 minutes.
8. Continue to check oven, and make sure that pizza does not start to burn. 9. The pizza base should be crispy, and the top of the pizza should be lightly browned.
Then serve up the pizza, and enjoy. Cook up multiple pizzas if you're feeding a big family, or take a look at some other pizza recipes, and have a selection on offer.
Just get rid of the pancetta, and you've also got a really tasty vegetarian pizza. It wouldn't be suitable for vegans though, because the pizza just isn't the same without the goats cheese.
