Pumpkin & Feta Pie Recipe

I've always had a thing for feta. The sheer saltiness can turn bland meals into something quite delicious. Here's a tasty recipe to try if you also have a feta fetish.
Ingredients:
700g of butternut pumpkin cut into 2cm pieces
4 unpeeled garlic cloves
5 tbspns of olive oil
1 sliced brown onion
1 tbspn of soft brown sugar
1 tbspn of chopped rosemary
200g good quality feta broken into small pieces
1 large sheet of ready-rolled shortcrust pastry
1 tbspn of balsamic vinegar
What to do:
1) Pre-heat oven to 200 degrees.
2) Place pumpkin pieces and garlic cloves in a baking tray. Drizzle with olive oil. Bake for 25-30mins or until pumpkin is tender.
3) Transfer the garlic to a plate. Leave the pumpkin to cool.
4) Heat 2 tablespoons of oil in a frying pan. Add the onion and cook over medium heat for 10 minutes stirring occasionally.
5) Add the vinegar and sugar and cook for 15 minutes or until the onion is caramelised. Remove the onion from the heat and add it to the pumpkin.
6) Add the feta and rosemary to the pumpkin. Squeeze out the garlic flesh and mix it through.
7) Arrange the pastry in a round pie dish.
8) Add the pumpkin mixture.
9) Bake for 30 minutes in the oven or until crisp and golden.
