I've always had a thing for feta. The sheer saltiness can turn bland meals into something quite delicious. Here's a tasty recipe to try if you also have a feta fetish.
Ingredients: 700g of butternut pumpkin cut into 2cm pieces
4 unpeeled garlic cloves 5 tbspns of olive oil 1 sliced brown onion 1 tbspn of soft brown sugar 1 tbspn of chopped rosemary 200g good quality feta broken into small pieces 1 large sheet of ready-rolled shortcrust pastry
1 tbspn of balsamic vinegar
What to do:
1) Pre-heat oven to 200 degrees.
2) Place pumpkin pieces and garlic cloves in a baking tray. Drizzle with olive oil. Bake for 25-30mins or until pumpkin is tender.
