A healthy dose of rocket hides the real masterpiece of this delicious breakfast dish at Public.

The wild mushroom omelette is rich with buttery and eggy goodness, the mushrooms are full of flavour, and the tomato caramel adds a level of sweetness. The final flavour kick comes from the goats curd.

It's a breakfast dish that leaves you satisfied, without feeling greasy, and it's a chance to get a hearty meal without having to add on any meat.

Served with sourdough on a wooden board, it can be a little tricky to eat. It might not look as nice on a regular plate, but it would probably be a bit easier to navigate.

As long as the sourdough isn't too charred there's not really any way this dish could go wrong.
