Pork, Leek & Spinach Roll Recipe

Just 15 minutes in the air fryer
As someone who enjoys eating vegetarian food, I was keen to find a spinach roll that all my family enjoyed. When I cooked my first spinach roll recipe I thought that everyone loved it, but at the end, they all asked "Where's the meat?" Once again, I went back to the drawing board and came up with a compromise - which is this Pork, Leek & Spinach Roll recipe, below.

It uses a small amount of meat (250g) for protein, yet it still has the authentic spinach roll taste - so everyone is happy! I cook these in my newly-bought air fryer in 15 minutes and they crisp up perfectly. Why don't you give it a try this weekend?

Crispy pastry!


Ingredients:

1 leek
2 garlic cloves
250g frozen spinach, thawed and water squeezed out
3/4 cup grated mozzarella cheese
1/4 cup pine nuts
250g pork mince
1 sheet puff pastry, thawed
Pepper to taste




What To Do:

Step 1: In a small fry pan, add 1 tablespoon olive oil and cook leek and garlic until soft.

Step 2: Add the spinach (which has had the water squeezed out) and stir for 5 minutes until more water is evaporated. Pour into a large bowl.

Step 3: While hot, stir in the grated cheese and pine nuts. Place in the fridge to cool.

Step 4:
Remove from fridge and add the pork to the mixture. Add pepper to taste (we use quite a lot!). Combine thoroughly,

Step 5: Cut the pastry sheet in half and using your fingers, add water to one long side on each piece. Divide the mixture in half and form logs down the centre of each pastry sheet.

Step 6: Roll the sausage roll up from one long edge, enclosing the mixture, and seal the pastry along the edge with water.

Step 7: Roll the sausage roll over, so the seal is underneath. Cut each roll into two, or to the desired size. Add two slits to the top of each one, to help with cooking.

Step 8: Place in the air fryer (15 minutes on 190 degrees) or in the oven for 200 degrees, fan forced for 25 - 30 minutes, until browned.

Step 9: Serve and enjoy!
