Over 3 weeks, Project Botanicals hosts three seating sessions per night from Wednesday through to Saturday, where patrons can choose from a selection of ten botanically inspired Bombay Sapphire cocktails, each with a matched tapas style dish, created by chef Gary Mehigan.

Project Botanicals , returns to Melbourne for its second year. For lovers of Bombay Sapphire gin, this pop-up gin bar is for you!
Each pairing pays tribute to one of the botanicals found in Bombay Sapphire gin, including juniper berries from Tuscany, coriander seeds from Morocco, liquorice from China, bitter almonds from Spain and cassia bark from Indo-China.

With tempting options such as Juniper Sublime G&T paired with Blue Swimmer Crab Toasts, and Liquorice Pontefract paired with Duck Pastilla, you will want to book in for more than one night. Check the full mouth watering menu pairings

Tickets are $45 per person (plus booking fee), which includes two cocktails and two matched tapas dishes, and a night of entertainment with guest DJs. The Sutton Street warehouse is converted into a chic pop-up bar, where after your 2 hour seating, you can continue to drink, eat, dance, and mingle, so make a night of it.
