Greek Salad in a Glass is an interesting new take on this familiar starter. The tomato, cucumber, and olives are finely diced, with a smooth and creamy goats cheese feta. The whole salad in encased in a clear, seemingly tasteless, jelly.

It's quite pretty, topped with violets and herbs, but the jury is out as to whether it's a good replacement for a regular greek salad. It's a lot neater than a traditional salad, you won't get bits of lettuce unflatteringly hanging from your mouth, but neatness is rarely a requirement for good food.

You'll find the greek salad in a glass on the Vegetarian Tasting Tile, along with the eggplant and feta terrine, with basil & pickled courgette and the spiced carrot, goat's curd mousse, & charcoal cone.
