There's something so comforting about a steaming bowl of soup in winter. This recipe couldn't be easier, and you most probably have the ingredients at home already. Try this for a quick mid-week dinner when you don't have much time on your hands.
Ingredients
1 clove garlic, finely sliced
2 brown onions
500g pack frozen peas
2.5 cups chicken or vegetable stock
3 tablespoons mint sauce
Directions
Heat a little olive oil in a medium saucepan and fry your garlic and onion for 3 minutes.
Add your stock and bring to the boil. Place your peas in the saucepan and cook for a further 5 minutes. Pour in your mint sauce, and season to taste.
Pour into the blender and process until it looks smooth. Serve with some fresh crusty bread.
