Pav Bhaji - Indian Vegetarian Curry Recipe

This is the recipe for a very tasty Indian vegetarian curry called Pav Bhaji, which is very easy to make and I'm sure whoever you make this for is going to love it. Pav means bun or bread and Bhaji means curry made with vegetables. It is a blend in an onion and tomato based gravy and it's also a great way to make the kids eat their veggies .

This recipe was a super hit at a recent New Years Eve Party with people asking for more.

What you'll need for the recipe is as follows;

2 cups boiled mashed potatoes
1 cup chopped and boiled mixed Vegetables(cauliflower,cabbage,eggplant)
1cup onion paste
3 cups of fresh tomatoe puree
4 tablespoon garlic paste
1 capsicum cut into cubes
1 big bunch spring/green onions chopped
2 teaspoon turmeric powder
1/2 teaspoon red chilli powder
Pav bhaji masala(according to taste). You can get this at any good Indian store.
100g butter for cooking or 4 tablespoon oil
salt to taste

For garnish
1 chopped onion
1 lemon cut into wedges
some chopped corriander
few butter cubes
some grated cheddar cheese

Heat butter in a pan and add the onion paste and cook till golden brown.

Then add the capsicum and fresh onions and cook for a few minutes.

Add the dry powders and cook for a minute then add the tomato puree and cover and cook for 5-10 minutes.

Add the cooked mixed vegetables, mashed potato,garlic paste and salt.

Cook till butter/oil floats on top mashing the mixed vegetables every minute to give a smooth texture.

Garnish with chopped onion,coriander, cheese and butter cubes.

Serve with buns or white bread with lemon wedges on the side.
