We were amazed and converted when we dined at the beautiful Paperbark in Waterloo recently. As a dairy and meat-eater, I generally stay away from vegan places unless otherwise persuaded... however, it was without a doubt one of the best meals I've had.

When I say we ate with our eyes, the food presentation was phenomenal - however, the balanced taste and textures were right there to back up the feast for the eyes.

Iggy's bread, paired with beautiful nutty oil and balsamic vinegar, complemented the gorgeous cocktails selected by our lovely waitress. Next up was the deconstructed Baba ghanoush with veggie tostada - boy, did it feel like we were in heaven already.

I wasn't ready for what came next - a rhubarb and chia mound, roasted macadamia and pumpkin, truffle pillows of gnocchi and delicious wine.

My only regret was not trying the mushrooms the establishment is known for - I'll be back!
