Pancakes are a quick and easy option for the morning, that bring a lot more fun to the table. Why not spice them up in light of the warm weather, and enjoy these vanilla pancakes, with delicious summer fruits. They'll take no time at all to prepare, and they are a light and refreshing breakfast meal.
This recipe makes four pancakes, but you can adjust it to suit you as needed. The pancakes are average size, but when topped with fruit one pancake easily makes a good breakfast. This summer fruit salad is also delicious on its own, so why not make double and enjoy some for dessert as well. There are so many ways to incorporate these tasty summer treats into every meal.
What you'll need: Summer Fruit Salad 1 Mango
1 Yellow peach 1 Nectarine 1 Punnet of strawberries 1 Punnet of blue berries Grand Marnier or Cointreau Sugar
1 Egg 1 Cup of Flour 1 Cup of Milk
1 Tbsp Vanilla Bean Paste
1. Peel mango, and cut all fruit into small pieces. Place in a bowl. 2. Pour about 3 tablespoons of Grand Mariner or Cointreau into a small container with 2 tablespoons of sugar. 3. Stir liqueur and sugar mixture to combine, and then pour over fruit salad. 4. Toss fruit salad to combine, and then cover with glad wrap and place in the fridge.
The fruit salad can be made overnight, to help the flavours seep into the fruit.
5. In a bowl combine egg, flour, milk, and vanilla. 6. Grease a frying pan with butter or oil, and heat on stove. 7. When pan is hot, pour about half a cup of pancake mixture onto the pan. When pancake starts to bubble, loosen pancake with a spatula, and then flip over till cooked. Continue until mixture is used up.
8. Place pancakes on plates, and then top with fruit salad, sharing evenly between servings. 9. Sprinkle some icing sugar over the top, and cover with some lemon juice or maple syrup.
