One paella, two paella, three paella, four. If you did not know that I will tell you. There are different kinds of paella around. Moreover, paella is not Spanish national dish rather Valencia's only. There is even an original paella dish called just that - Valencian.

Given that paella slowly but surely is becoming second 'eggs benedict' in our family (a dish we must have anywhere we can find it), I have tried paella all over Melbourne and even Auckland. I can tell you, they are, paellas that is, are as different as the chefs who prepared them.
