The craze surrounding smoked and slow cooked meats is showing no sign of slowing down. With every new cooking show or food truck, everyone seems to be turning down the heat and slapping a dry rub of barbecue spices on a big piece of beef, pork or lamb.

While traditional American barbecue is fantastic (and extremely diverse), with any cuisine it's always those cooks who are brave enough to experiment with new ingredients and flavours that create something truly new and special.

Ozmoke is a smoked meats stall specialising in brisket, pork, chicken, ribs, and chorizo. Hailing from Venezuela, the owners come from a variety of backgrounds but share a common love of good food.

They cook low and slow in their renowned Radar Hill smoker 'El Jefe' (Spanish for "the boss"), using natural charcoal and Australian woods. Ozmoke combines traditional American barbecue techniques with Latin flavours to add their distinctive touch. The result: deliciously tender, juicy, and, of course, smoky meats.

Lifting the lid partway during smoking reveals meat starting to develop that beautiful smoked crust.


Starting in the early hours of the morning, the team enjoys watching the sunrise while the coals get hot inside 'El Jefe'. When they reach the perfect temperature, the smoking process begins and only ends 8 hours or so later.

On Saturday 4th February Ozmoke will be at Brendale Brewing Company from 4pm, serving their second-to-none brisket and pulled pork burgers. On the day they will also be cooking a special of beef ribs. Previously their ribs have sold out within the first 30 minutes. So, if you're feeling like you want some, make sure you get there nice and early.

Once you have gotten your quota of tasty meat, you'll quite likely be ready for a nice cold craft beer. Have a look at the Brendale Brewing Company's Facebook page here. If you want to stay safe so that you can try a few of the beers on offer, Strathpine railway station is a fair hike away (1.8km each way via Kremzow and South Pine roads); much more comfortable to sweet talk a friend or organise an Uber.

Here's what Ozmoke will be serving on the day:

Rattlyblade brisket burger with zesty summer salad, pickles and fried cassava
Papa's pulled pork burger with zesty summer salad, pickles and fried cassava
Beef ribs with zesty summer salad, pickles and fried cassava

To these you can add your choice of sauce; apple cider salsa verde, smoky barbecue sauce or garlic mayo.

When you meet the Ozmoke crew you will see that they love what they do, which is evident in the quality of their product. They use 100% fresh Aussie meats, sourcing their ingredients from local suppliers.

If you can't for some reason see this beautiful big tent (maybe due to all the people lining up) you will definitely be able to smell the meat.
