This cake makes a perfect present for a friend with a sweet tooth, or even as a tasty dessert or snack when you have friends over.
> 2 eggs > 100g caster sugar > 100g Stork cooking margarine > 100g plain flour > 1 tsp baking powder > 1 tsp bicarbonate of soda > 3 tbsp good quality cocoa powder (I normally opt for Green & Blacks) > A splash of milk > A small bag of cashew nuts > A jar of Nutella
> Pre-heat oven to 190 degrees celsius, and grease a medium sized cake tin. Lay the bag of cashews out on a hard surface, and beat with a rolling pin or wooden spoon until broken into small pieces. > Beat the eggs, and sift the flour, cocoa powder, baking powder and bicarbonate of soda together. Then, mix all your ingredients together until smooth. > Next, poor the mixture into the greased cake tin, and cook for 20-30 minutes (although some ovens, like my slow, student halls cooker, may take longer). > When cooked through (you can test this by sticking a clean, metal skewer through the centre of the cake, if the skewer comes out clean and without any gooey residue, the cake is cooked through), leave to cool, before removing from the cake tin for decorating. > Coat the top of the cake with Nutella, then, cover the Nutella with broken cashew pieces. > Serve and enjoy!
