hey katy! definitely go for it! The only difference is that the traditional French ones have the chocolate custard while "Aussie" ones have the whipped cream- which I have always found to milky, and therefore heavy. the custard is thicker and richer but I think works much better with the choux pastry. let me know how you go! =)
