Summary
According to Julianne Bayer, no-bake desserts are perfect for novice chefs looking to dip their toes in the water before diving in. There is not much guessing needed when it comes to no-bake desserts. With the easy-to-follow instructions in her book, you are going to find your way to dessert bliss.
More experienced bakers can find a few simple no-bake concepts with more challenging elements. One thing is certain, you can put your own personal touch on these desserts.
*No-Bake Cheesecakes
Banana Cream Pudding Cheesecake - Cheesecake topped with banana slices and vanilla pudding. Then, topped with whipped cream. You are going to need an extra-large fork!
Ultimate Oreo Birthday Cake Cheesecake - The bottom layer is a cake batter cheesecake stuffed with Oreos. The middle layer is a plain cake batter cheesecake. The top layer is a light and fluffy chocolate mousse.
Pina Colada Cheesecake - This recipe features a thick, buttery vanilla crust with a dense shredded coconut cheesecake spiked with rum.
*No-Bake Pies
Bourbon Butterscotch Pudding Pie - The key to making a good butterscotch pudding is brown sugar and melted butter spiked with a subtle touch of bourbon.
*No-Bake Layered Desserts and Icebox Cakes
Cookie Dough-Lovers Icebox Cake - This icebox cake is a cookie dough lover's dream. Stuffed with cookie dough, this dessert has layers of chocolate graham cracker and cookie dough mousse.

No-Bake Cookies, Bars and Treats
Puddings and Parfaits**
Mudslide Parfait - The author took her homemade chocolate pudding and spiked it with coffee liqueur. Layered with a chocolate cookie crust, the spiked pudding and Irish cream whipped cream.
Eggnog Gingerbread Pudding Parfaits - The author uses eggnog for the homemade pudding instead of milk or heavy whipping cream. Flavored with a hint of nutmeg and jazzed up with a gingerbread or graham cracker crust.
Opinion
I love, love, love this no-bake cookbook. There are a couple of exceptions. Yes, I love the chapter on Ice Cream and Frozen Treats but found to be quite a bit complicated. Maybe more experienced bakers can handle the recipes.
The chapter on No-Bake Cookies, Bars and Treats was good but does not stand out like the rest. Banana Cream Pudding Cheesecake is my favorite! It is not too sweet, just right.
Personally, I cannot beat my mother's baking. No-Bakes are what I can handle. I give this cookbook a
5-star rating!
