Jazz up a tub of ice-cream this weekend
Are you looking for a budget-friendly dessert that the whole family will love? Then pick up a home-brand tub of Neapolitan ice-cream and jazz it up with some extras. The best part about this recipe idea is that you don't have to limit yourself to Neapolitan ice-cream - you can do it with any flavour ice-cream and add any fruits, nuts, chocolates or lollies that you like!
This slice didn't last long in our family - I can guarantee it won't last long at your house either!
Step 1: Line a loaf tin with plastic wrap, leaving some to stick up over the sides.
Step 2: Drop in the strawberries and spoon enough of the strawberry ice-cream to cover. Wait 5 minutes for the ice-cream to melt a little and then use a knife to smooth it over. Place in the freezer for an hour or so to harden.
Step 3: Spoon in the vanilla ice-cream and wait for 5 minutes for the ice-cream to soften and then smooth it over with a knife. Sprinkle over the desiccated coconut. Spoon in the chocolate ice-cream to cover all the vanilla, allow to soften, smooth over with a knife and then sprinkle the choc bits on top.
Add the strawberry layer, freeze, then add the vanilla/ coconut and chocolate layers
Step 4: Cover the top of the loaf tin with cling film and then wrap the entire loaf tin in foil and fold in the edges, so it is sealed. Allow to freeze overnight.
Step 5: When ready to serve, unwrap the foil and place a plate on top of the loaf tin and flip it over. Remove the tin and cling film and quickly cut off your slices before it melts too much. Wrap the rest of the ice-cream loaf in foil, sealing the edges, and place back in the fridge.
