If you haven't been down to Fitzroy to try the latest crave, it's well worth the trip.
Inspired by Heston Blumenthal and Ferron Adria, liquid nitrogen is used to create gelato as you watch on. The nitro is added to your ice cream in a liquid form and because it freezes at -6 degrees celsius instead of the normal -16 degrees celsius, you end up with a seriously smooth and creamy gelato.

The menu changes weekly so you can keep going back and always be surprised. Previous flavours include Strawberry and Pepper, Creme Brûlée, Mango, Lemon Lime and Bitters and Banana with a Shortbread Centre. Not only do they have these delicious flavours, but for the adventurous foodie there has also been Earl Grey, Kimchi, Gin and Juice and Green Tea Cheesecake.
