Do you know what raw honey is? Did you know that not all honey is raw?

When you think "raw" think uncooked vegetables and meat, whereby any form of heating is avoided so as to ensure all the natural vitamins and living enzymes and other nutritional elements are preserved. Raw honey is the most original sweet liquid that honeybees produce from the concentrated nectar of flowers. Collected straight from the extractor; it is totally unheated, unpasteurised and unprocessed.



A lot of honey found in the supermarket is not raw honey but "commercial" regular honey, some of which has been pasteurized (heated at 70 degrees Celsius or more, followed by rapid cooling) for easy filtering and bottling so that it looks cleaner and smoother, more appealing on the shelf, and easier to handle and package.

I recently stumbled across an interesting little business by the name of Raw2You, based in South East Queensland, which specialises in 100% organic honey. The bees responsible live in a natural environment and feed off wild flowers, trees and
grasses on property next door to Dularcha National Park, which nestles between Landsborough and Malaney. No chemicals - that's got to be a good start, right?

Raw2You have created Spreads using the raw honey and whipping them with honey that has already crystallised. This produces a soft and creamy spread that retains all the nutritional benefits of raw honey and it is easily manageable. They have then added flavourings, again all natural, creating some truly delicious gourmet whipped honey spreads.



MySpread comes in five flavours. Five different flavours! That makes it just as difficult as picking your favourite flavour at the local ice creamery.

My favourite is the Cinnamon Honey which is equally as good on a hot crumpet as on a fresh scone. And isn't this weather just perfect for both? My friend and fellow taster agreed, although she was also quite partial to the Vanilla Honey. The Strawberry and Raspberry Honeys were both true to their fruit flavours. Neither of us clicked for the Hazelnut and Cocao Honey, adamant that chocolate is a stand alone food group, though my partner claimed it as his preferred taste sensation.

At this stage MySpread is only available online although the owners of this family run small business are looking at selling at local markets in the near future.

The website, www.raw2you.com is easy to negotiate, even for those of us who spend most of the working week fighting, and generally, losing to technology. Their Facebook page is well on the way to becoming a valuable resource for recipes using these products. Take a peek at the Dipping Sauce - this would be wonderful with summer fruits as a dessert.

The relatives from interstate will be visiting shortly. I had better order another Qld gourmet honey to impress.
