Mug cake? What on earth is a mug cake? Many of my friends thought that I mis-spelled mud cake for mug cake. But no, you read it correctly.

A mug cake is an instant cake of sorts. They're easy to make, uncomplicated compared to your psycho ex and less time consuming than having to maintain a relationship with anyone.

Best of all, you can make it anywhere with a microwave and enjoy a cake in under 5 minutes. My Canadian friend calls this his lifesaver in winter. All you need is a few ingredients and lots of imagination.

I made some important modifications to guarantee you a successful mug cake. You really just have to understand that baking is pretty much a science - the right chemistry will get you a nice fluffy cake.

One, use cake flour instead of regular flour. Your cake texture becomes much softer.

Two, use evaporated milk for that extra milky taste.

Three, use proper baking measures like a measuring spoon. And level all ingredients with a knife for better accuracy.

Four, use melted butter instead of oil. It makes everything so much more yummy.

Lastly, use brown caster sugar instead of regular caster. The molasses make the cake tastier.

The recipe...
4 tbsp of cake flour
4 tbsp of brown caster sugar
1/2 tsp of double acting baking powder
3 tbsp of evaporated milk
3 tbsp of melted butter
1 egg
Nuts, berries, cheese or chocolate chips to go with the recipe.



Throw all the ingredients together. I used blueberries, cranberries and cheese for this recipe.



Microwave for 2 minutes.
