"MrDuk , MrDuk , MrDuk , MrDuk" , exclaimed Mrs Pork - Online as she wanted to Eat My Tarts . Click on every one of those highlighted words and you'll find MrDuk's fingers in every pie, or is that tarts? It wasn't that long ago that I wrote an article about him and his businesses , and now he's scurried off and started yet another. To be honest, I don't think he knows how to scurry. He only knows how to move in leaps and bounds.

This is a man with a fire in his belly, forging ahead, passionate about what he does and with a huge vision. He does this with a lot of heart as many of his customers will attest and gives service with a smile with a twinkle of the eye. We should all be so lucky to find a mission in life that consumes and inspires us.


MrDuk (Dave) has finally found a home to come home and roost. Vision Gardens (perfect) is where it's at, 2680 Frankston Flinders Road (cnr Daly Street) Bittern, a pleasant little escape from the city. He only bought the place 4 weeks ago, but it's already operational with a working kitchen and the cafe / restaurant is already open for business even though as I understand it, its opening day is on the 30th of April; so go out there on opening day and surprise and support MrDuk people.

The actual grand launch is on Mother's Day weekend, the 9th and 10th of May, 2015 from 7am to 5pm to cater to those patrons who want to go for Mother's Day breakfast. Call Dave on 0424 255 098 to make bookings for breakfast and lunch.


On the mother's day menu at $49 per head for a 3 course lunch you can expect to find a set menu with a few choices for starters, mains and dessert listed.

You can have grilled Moreton Bay bug meat with lime aoili mayo OR free range Peking style duck pancakes wrap with organic herbs and fresh micro medley OR roasted baby beets on calcone stack with herb spiced bechamel for starters.

The choices for mains are duck confit with sage butter sauce and roasted kipfler potatoes OR 3 cheese and tripod house made gnocchi, beetroot, kipfler, kumara with white cream au OR oven baked Harvey Bay scallops with corn and coriander salsa, evo oil and butter oak leaves.

Dessert choices include vanilla pod panacotta with rose water, edible flowers and brown sugar floss OR mum's home style pavlova with winter berry fruits and pistachio and mascarpone lard. Bookings are essential so call 0424 255 098.


There will also be a small market operating on site on the day of the launch, along with some entertainment and more. You'll find jewellery artisans. candles, hair accessories, fashion wear, homeware, childrens wear and beauty and skin care products to name a few types of stalls to expect, and more. Organised by Indie Market Place , they already have an event page in place on Facebook so you can keep checking back for updates and information about stallholders that are going to be there.

Visiting MrDuk @ Vision Gardens yesterday, I got to see first hand different sections of the property where dreams are going to fall into place.

Travelling from the south east suburbs, it took me about 50 minutes to get there. My route took me via the Eastern Freeway, down Coolart road, past the Emu Plains Reserve (where the Emu Plains Market and the Balnarring Picnic Racing Club events occur) and finally at Bittern where Vision Gardens is at the corner of Frankston-Flinders and Daly Roads.

Once I got there I was in for the long haul. It was so pleasant to be out of the city and amongst the tranquility of the place. The food and the company was good and I easily fell into a lull of staying for dessert, having several cuppas, before dragging myself back to reality and home.


By that time I had consumed a soy latte, 2 cups of Earl Grey tea, a flourless orange cake with cream and pomegranates and an 'avacado vision' (mushrooms, diced avocado, truss tomatoes, basil pesto and poached eggs with a slice of sourdough bread). My friend had the chef's special, a sweet potato gnocchi with creamy blue cheese and wilted spinach.

Upon invitation of Dave, I got to see the raw bones of the place with tradesmen running around getting things up and running. Surprisingly it was a busy atmosphere not just because of the tradesmen but there were already other customers frequenting the venue, having their lunches as well. It certainly was a pleasant day for it and the weather was behaving perfectly well. I was given a tour of the grounds (which of course needs a lot of work at this stage - he only bought it 4 weeks ago) and various areas were pointed to for future reference of what was going to take the place of those empty spaces and it's current overrun garden.


Dave was very clear about making it child friendly and even intends to put in a sandbox for the kiddies to play in. He will of course grow a lot of his produce; vegetables, herbs etc on the grounds and there's a big section out the back to hold a market every single weekend. He's waiting on two shipping containers to be brought in which will be converted to an onsite bakery where they'll bake all their own bread. How exciting.

There'll be a retail and a wholesale section to facilitate those customers that are already serving MrDuk's pies and tarts in their cafes, restaurants and other venues. Plus there are plans to have 'live' gigs onsite and of course the venue can be hired for functions and events. It's already licensed.



When you visit MrDuk @ Vision Gardens, expect to find a breakfast menu ranging from $8 to $18 with names like 'brain health booster', dietary fibre and antioxidants, wrestle with spicy baked eggs, work-out energiser, energy booster, stacker, avocado vision, the egg white omelette and cheese or duck souffle. The kid's breakfast menu from 9am to 12noon are just $4 and includes pikelets, bacon and eggs, cheese omelette, bacon and cheese toasts, cheese and vegemite toasts and mini bircher.

Lunch is served from 11.30am to 4pm (there are no dinners) and range from $9 to $24 that include starters of trio of dips and a cheese plate selection. Mains simply under the heading of Mrduk include pulled confit, Peking style duck roll and free range duck rolls with their various accompaniments, dressings and sauces. From the grill you can have spiced local calamari, Creole free range chicken, King Island beef and pulled pork again with accompaniments, salsas and dressings.


Salads include warm organic quinoa with roasted beetroot, herb pumpkin, farm fresh cheese and citrus dressing; bocconcini with sliced roma tomatoes, basil & evo oil (small plate) and organic kale with roasted walnuts, avocado smash and lemon dressing. Under the heading of Bola De Carne you'll find flat breads, free range duck, pork & beef harissa, wagyu beef, market fish and seasonal veggies. I think there's plenty on the plate to keep you going. There isn't a dessert menu just yet but there are gluten free cakes and muffins on offer everyday.

To summarise, MrDuk @ Vision Gardens is open every single day 7 days a week from 9am to 4pm.

The 30th of April is 'Opening Day' for this Cafe & Restaurant and will sport regular opening times.

The 9th and 10th May 2015 weekend is the official 'Launch' of this venue and will open from 7am to 5pm for this weekend only to cater to those who want to take their mums out for breakfast. There will also be a market on site on the day from 10am to 3.30pm. As there's not a landline just yet, call Dave on 0424 255 098 for bookings, especially for Mother's day which is essential.
