Gifts, Food and Lots of Love to Mum
Mums are a treasure, they are always there when you need them and a big hug and an "I love you" mean so much.

It is always hard to find that perfect gift for Mum. I am a big believer in gifts made with love, my favourite, homemade passionfruit curd over meringues or strawberry jam and scones.

I do though love shopping for gifts. Here are some ideas:

A gift that will give your Mum years of enjoyment and colour - a vibrant rose bush or flowering shrub to plant in the back yard. Bunnings have a wonderful selection of plants.

Lastly, create a special breakfast in bed at home for mum. Dress a breakfast tray with flowers, homemade pancakes topped with maple syrup, fresh fruit and a welcoming cuppa and book.

My Mother's Day Pancakes

2 cups self raising flour
2 eggs
1/2 cup sugar
2 cups milk
2 teaspoons vanilla essence

Mix all ingredients in bowl. Drop big spoonful of mixture onto a hot, lightly greased (use butter), non-stick fry pan. Turn pancake over when bubbles start to burst onto top surface. Cook second side until golden. Place in oven to keep warm and cook rest of mixture.

To serve place two or three pancakes on a plate and top with strawberries and maple syrup. Serves four.
