The 'Fisher Bay Martini' derives its name from the Fishers Gin, an artisan British gin distilled on the Suffolk coast that uses English seaside botanicals like spignel and rock samphire. The botanicals create an unfamiliar herbaceous smell and flavour that strays from the usual juniper on the tongue. Mixologist and Bar Manager Joseph Millar balances the sharp piney taste with the addition of Noilly Prat Vermouth, olive brine with the fragrance of air-dried thyme. Sip on this dry and herbal cocktail as night falls around Marina Bay.
