The star of the 'Il Segreto' is the Fermin Ibérico pork from one of Spain's acorn fattened pigs. One of the oldest heritage breeds in the world, the Ibérico pig feeds on acorns, wild herbs, mushrooms, and grasses. The restaurant uses a 'Secreto' or secret butcher's cut. Marinated and grilled to medium-well, the strip of pork is lightly charred, fragrant, tender and moist. It is accompanied by meaty and chewy sauteed Chanterelle mushrooms and a generous layer of creamy Polenta.
