Funnily I stumbled upon these by accident, in my attempt to use up some ingredients and bake some cookies (my first attempt). They went a little wrong but actually they taste really good! Now I am donning them a success and taking complete creative license over my invention. They taste like soft Rusk biscuits, remember those cereal type biscuits you used to have a child? How nostalgic!
Preparation time: 15 mins
Baking time: 10 mins (so they are still gooey in the middle)
You will need:
225g unsalted butter (room temperature works best)
120g sugar
275g plain flour
What you need to do:
1. Preheat your oven to 180c.
2. Cream the butter and sugar until doubled in volume in a large mixer bowl.
3. Sift the flour in and mix together to make a firm dough.
4. Shape the dough in cookies (I went for giant cookies) this helps if you wet your hands first.
5. Place them on a baking tray and flatten them with the back of a spoon.
6. Pop them in the oven for 10 mins so they are still really gooey, and wait for them to cool. Enjoy!
You can also add dried fruit to make these like rock cakes, or other spices and chocolate chips.
