Fried whitebait is not uncommon in many bars and restaurants in Melbourne.
A seasonal dish in Guy Grossi's Merchant in the InterContinental Melbourne The Rialto, a light dusting of batter cover fresh and fat whitebaits. Then quick fried to provide a crisp without drying up the moist meat flavour.
They tasted great without the accompanying lemon wedge or sauce. I missed it on my most recent visit.
