Visiting Brisbane, from living abroad, is always a bit overwhelming. While there are my go-to places that will always be there, new ones are popping up all over the place. I had the pleasure of spending a full day in town shopping with mum and stocking up before heading back overseas. After spending close to the budget I had allocated for myself, and with the shops calling it a day, I decided I was half an hour away from getting 'mangry' (mad and hungry combined) and needed to fuel up ASAP.



We headed down in the direction of Eagle Street Pier. Walking down Creek Street I noticed some people with a yellow box and was curious to know what it was. I asked a couple what they had and they directed me a few meters down to Melt Brothers. I think I just died and went to cheese heaven.



Melt Bros have taken the humble cheese toastie, made it a little fancy and given the people of Brisbane a variety of options. Just when you thought "hang on, I bet there is no vegan options?" Well, I am here to tell you that there is. The restaurant caters for vegans with a vegan cheese option to replace the popular mozzarella or cheddar option.

After scanning the menu and my tummy making noises to hurry up and make a decision, I opted for the macaroni with maple bacon, cheddar cheese and chipotle mayo, whilst mother went for the BFC (standing for Buttermilk Fried Chicken). We decided to share half of each to see which one we liked better. Both were equally delicious, but the chicken won my heart.

Unfortunately, I didn't get any of the tater tots (similar to what us Aussie's called potato gems) but I have been told they are crunchy on the outside and super fluffy on the inside. These can be added to your cheese sandwich or on the side loaded with cheese sauce, bacon bits and spring onion. These are almost a meal on their own.

Melt Bros has been around for just under a year and are from the same duo who brought you Miss Kay's Burger Bar . With only one city location at the moment, this shouldn't deter you as you can also be delivered a scrumptious cheese sandwich via the popular food delivery services Uber Eats and Deliveroo. If you are after a little warmth this winter get Melt Brothers to sort your cheese addiction.
