Are you looking for a sweet slice recipe to make for morning tea? Or are you looking for a new slice recipe to make for your kids? This Marshmallow and Strawberry Jam Slice will be perfect for both and it is so easy to make, you're sure to make it again and again. If you love marshmallows, one slice will not be enough - especially when it comes out of the oven and the marshmallows are soft and gooey!

You don't need many ingredients for this recipe - you may even have them in your pantry right now. The hardest part is not to snack on too many marshmallows while you're making it!



What You Need

**375g of your favourite crumbly biscuit ( Scotch Fingers are the best, however, Digestive biscuits also work with this recipe)
1/3 cup desiccated coconut
125g margarine, melted
80g pink and white mini marshmallows
1/2 cup strawberry jam

What To Do

1/ Preheat oven to 180 degrees, fan-forced.

2/ Line a rectangle slice tin with baking paper.

3/ Place biscuits in a zip-lock bag and hit with a rolling pin to crush. Pour into a bowl and stir in the desiccated coconut.

4/ Place margarine and 3/4 cup of marshmallows in a small saucepan. Add 1/4 cup hot water. Stir over medium heat until smooth. Add to biscuit mixture and stir to combine. Press down firmly into the lined rectangle slice tin using a metal spoon.

5/ Place in oven and cook for 10 - 15 minutes until golden. Remove from oven and put aside for 10 minutes to cool slightly.



6/ Spread jam over the base and sprinkle with the rest of the marshmallows.

7/ Return the tin to the oven and cook for a further 15 minutes, until the marshmallows have joined together and the top has browned on the edges.

8/ Allow to cool and cut into squares using a large knife in single strokes (beware - the marshmallows are sticky!).

This is one recipe that you will put in your family cookbook and make time and time again. It is the perfect recipe for all sweet tooths to make this weekend!
