To celebrate Bastille Day, a Lyonnaise pop-up will take over Silvester's Restaurant , Circular Quay, for seven days. French chef Raphael Szurek is planning seven spectacular courses, all inspired by the cuisine of Lyon.



Just some of the dishes to expect are Champagne-infused oysters, foie gras and yellow chicken pâté & #8203 ;with smoked mayonnaise, braised beef cheek parmentier with winter black truffle and bouillabaisse. For dessert, there are honey and pears, followed by lychee and raspberry vacherin & #8203 ;with hibiscus and meringue. Meanwhile, the impressive wine list features more than 100 excellent drops from France and further afield.

"The French menu was inspired by my very first years in the kitchen in Lyon, the capital of French gastronomy," says Szurek . "It is the true experience and essence of French cuisine without unnecessary artifices – showcasing classic techniques, the best locally sourced products and authentic tastes."



Szurek grew up in Paris, before training with legendary Lyonnais chef Paul Bocus (aka "the Pope of French cuisine"). He's since worked in Michelin-starred restaurants all over the world and is now Head Chef at Silvester's, a five-star within Sydney Harbour Marriott Hotel, which won a 2019 Good Food Chef's Hat.

In keeping with the Bastille Week theme, Silvester's will receive a French makeover, complete with theming, music and costumes.
