Originally from Denmark, Erik went into business with his son-in-law, who happens to be a qualified butcher. He tells me their wives come up with the spice combinations for the sausages, and Erik credits his wife especially, whom he says has an acute knowledge of how spices interact.

Shaking off the origins of when sausages used to be bits of leftover meat from the butchers, these are top quality low fat and gluten free. There is also a large range of lactose and fructose free varieties.
I'm sure there's a sausage on that list to suit every palate. The sausages are hand made with only the best quality ingredients in small batches, using fresh in-season herbs and vegetables. The beef is all Australian from the Yarra Valley, and they use Laonica Chicken and Leadoux free range turkey in their sausages.
Yumm! My favourite is without a doubt is the chicken with pine nuts. Love it's taste with the texture of the pine nut. These aren't fatty and taste brilliant. Eat one and bet you'll want to eat more. I have tried a few more of their fare and liked them too but my favorite is the chicken and pine nuts.
I've seen people lined up to buy their fare. To me that's a good recommendation.
Here I am again and today in the freezing morning with the sun popping out here and there I visited the Lockton Farm Gourmet Sausage stall. This time I was dazzled by yet more amazing new sausages to taste test and buy.
The newest sausages and yummmo too to choose from is this time along with their huge variety is Chicken Cheese and Chive, Honey Mustard Chicken, Turkey Cranberry and Basil and Thai Green Curry Chicken as well as their Chicken, Spinach and Pine nuts which is my favourite. So today I tasted all of them and loved them all and this time its a debate with my self which is my favourite between their Chicken/Pinenut my fav or the yummmoooooooohhhh Thai Green Curry Chicken. Let me tell you they are ALL delicious and it was tough to make a decision as its all a matter of taste, your mood etc but I would have to say dont go paste the delicious Thai Green Chicken on. Its not hot it isnt hugely spicy but its all in a balance of what you would imagine this famous dish would be tasting like in a sausage. Its seriously delicious as is the Turkey Cranberry n Basil. yum, but of course everyones taste is different but you wont be disappointed at al, I promise and the other bit of information is they are low in fat and gluten free plus you can speak to them about fructose and preservative free too. I really believe thats why I like them so much and thats because of they have health in mind. Try them and as I said you will be going back for more. :D
