You can never add too much cheese
Loaded fries have increased in popularity over the years, with hot chips loaded up with a variety of meaty combinations, melted cheese and spicy sauces at takeaway shops all around the country. It's a combination that no one can resist!

This healthy combination below is a tasty alternative, which is filling for lunch or dinner. The good thing about loaded fries is that you can really load your fries up with anything - leftover taco meat, bolognaise, butter chicken - whatever you have on hand. As long as you melt cheese over the top, anything is possible!

Ingredients:
2 small sweet potatoes, peeled, halved and chopped into chips
1 teaspoon smoked paprika
3 Tablespoons olive oil
1 cup of BBQ chicken breast, shredded
2 Tablespoons sweet chilli sauce
1 cup grated mozzarella


Guacamole Ingredients:
1 avocado, mashed
1 small garlic clove, finely diced
2 spring onions, sliced
3 cherry tomatoes, quartered and seeds removed
2 Tablespoons fresh coriander, chopped
1 Tablespoon lime juice

What To Do:

Step 1: Preheat oven to 200 degrees, fan forced. Line a baking tray with baking paper and spread the sweet potato chips out. Drizzle with olive oil and scatter the smoked paprika over the top. Bake for 30 minutes, turning after 20 minutes.

Step 2: In a small bowl, combine the guacamole ingredients.

Step 3: Preheat the grill. In a heat-proof bowl, add the hot sweet potato fries, a sprinkle of mozzarella, BBQ chicken and guacamole. Drizzle sweet chilli sauce over the top and then sprinkle with the remaining mozzarella. Place under the grill for 3 - 5 minutes, until the cheese bubbles and browns.

This recipe can serve one or two people, depending on if you want to share!
