Lemon and Blueberry Cornmeal Pancakes

One of the best things I like to do on a weekend is to cook up a scrumptious breakfast. Pancakes are a firm favourite but the copious amount of flour, eggs, sugar and butter makes me give it a miss. But a girl's got to live and live well; so I was the most happy to discover these cornmeal pancakes that are full of taste without the unnecessary calories.
You will need two teaspoons of butter, 50g plain flour, 50g cornmeal, 1 tablespoon of sugar, one teaspoon of baking powder, half a teaspoon of lemon zest, 1 rounded teaspoon of dried blueberries or raisins, 130-135 ml of buttermilk (half low fat yogurt-half water), 1 teaspoon lemon juice and honey/maple syrup to drizzle.
Melt the butter in a pan.
In a bowl, whisk together all the dried ingredients.
Make a well in the middle and pour in the buttermilk, melted butter and lemon juice. Make a batter. Re-heat the pan.
(I know it's not pretty but it will taste pretty once cooked.)
Add dessert spoonfuls of the batter and let it cook on each side till it's golden brown on each side. Drizzle the pancakes with honey/maple syrup and enjoy.
