Today I had a dilemma. I had made a batch of cupcakes using a new recipe and they really weren't up to scratch. Maybe I left them in the oven a tad to long but the resulting cupcakes were a bit dry.

Not wanting to waste them I took to google for a solution. There were a few good ideas - turn them into trifle, crumb them & freeze them, even add the crumbs to another cake mix. All good ways to use them up, however I came up with my own brainwave. Turn them into Lamingtons. A warning though, this can get messy!

Ingredients
2 1/2 cups icing sugar
2 generous tbspn of cocoa
1/2 cup boiling water
Shredded coconut
Raspberry jam

Method
1. Make the icing by sifting the sugar and cocoa together and thoroughly mixing through the boiling water. The icing will be quite runny but it needs to be or else the cake will fall apart.
2. Slice the top off the cupcake and smear one half with jam. (You don't actually have to do the jam, I made some without and they were still yummy.)

3. Press the two halves back together and using a fork, skewer the cupcake and dip in the icing. When it's covered in icing, hold it over the bowl for a few seconds, allowing the excess to run off.

4. Roll in the coconut.

Once you have finished, refrigerate for an hour or so until set.

You could do this with any plain cake. It's better to use day old cake too as it's less likely to fall apart in the icing.
